Vegan Raspberry & Nut Parfait

Lately, I've been packing on the pounds during quarantine. Over indulging and not having any regard for portions. I've also been experiencing midnight munchies on a regular basis. When I was first Vegan I was sooo disciplined, being on a strict regimen, doing low-carb vegan with intermitten fasting, supplementing and making sure I get all the healthy nutrition, fats and proteins. But, I have since become much too relaxed.


Anyway, I've been having cravings for yogurt. I thought it would be a good way to incorporate some healthy fats to keep myself satiated and from over eating.


I found this ridiculously easy recipe on YouTube by Joyous Health that's also super delicious. I'm sooo in love with it. I'll link it below the photos. Scroll on down and keep on reading to see how I put this together.


It's a great combination and way to get your fat, protein, and probiotic consumption.






From the bottom: jam, hemp seeds, yogurt, almonds, maple syrup, yogurt, rasperries & a sprinkle of hemp seeds


Prep time: 12-15 hours (for yogurt)

Assemblage time: 5 minutes


INGREDIENTS:

YOGURT:

2 Cans of full fat coconut milk / creme (look for 12 grams of fat or higher)

3 pills of probiotics

TOPPINGS:

Fresh raspberries

Raspberry jam

Hemp Seeds

Almond slices

Maple syrup



INSTRUCTIONS:

  1. Make the yogurt. Refrigerate the coconut milk cans so the fat rises to the top. Then scoop the fat out and put it into a bowl. Mix it. Add in coconut or not (if you like it thick) until desired consistency

  2. Open 3 pills of probiotics and sprinkle it in. Mix it well.

  3. Saran wrap the bowl and leave it somewhere warm for 12 hours, like the oven (being off). 12-15 hours later it will taste sour like greek yogurt.

  4. Proceed to assemblage.


Follow this order of assemblage or heck, do your own thing!

From the bottom, spoon in and layer the ingredients: jam, hemp seeds, yogurt, almonds, maple syrup, yogurt, rasperries & a sprinkle of hemp seeds
