Like to eat crispy things but hate turning on the oven? If so, then you must get an air fryer. I recently got one and I have been air frying everything. I don‘t know how I’ve gone so long without one and my only regret is not getting one sooner. I wish someone was sponsoring me for this. Sadly, no one is ðŸ˜. These are just my honest thoughts about the air fryer.
Ok, let’s get to the nitty gritty. I love curry puffs and I have made them with home made pie crusts, as well as phyllo dough. These are the super easy and quick version using puff pastry and of course the air fryer, which makes them even quicker and easier than the baked version.
These flaky and crispy savory little hand pies are perfect for snacking. If you like curry and potatoes, you’ll love this. Sure, you can eat just one, but its almost guaranteed you’ll want more.

Prep Time: 25 minutes
Air Fry Time: 11-14 minutes
Total time: 45 mins approx
Yields: 16 -18 approx
INGREDIENTS:
2 sheets frozen puff pastry - defrosted
1 russet potato - peeled, steam or boiled, and mashed
Vegan beef crumbles (equal parts to the potato for 50/50 ratio or adjust to your preference)
1/2 of an onion
Handful of frozen green peas
About 1 tbsp cooking oil (I used refined coconut oil)
Curry powder
Chilli powder
Salt
Soy Sauce (use sparingly)
Optional: pepper & onion powder
**Season and adjust all porportions to taste
**Essentials: potatoes, beef, curry powder and salt. All other can be omitted or substituted if you don't have the ingredients.
MAPLE EGG WASH:
1 tsp approx of maple syrup
1/2 tsp plant milk or water
**Combine and mix. Set aside.
INSTRUCTIONS:
In a heated and oiled pan, sauté the onions until translucent.
Throw in the mashed potatoes. Mix. Then throw in the beef crumble and green peas. Combine and mix well
Add curry powder, salt and other seasonings to taste. Set aside.
On a lightly floured work surface, roll out the puff pastry to about 1/8" thickness or slightly thinner. Using a round pastry cutter, cup, or bowl, cut out circles in pairs.
Fill the center of the puff pastry disks with a spoonful of the curry filling. Add a 2nd disk on top and press the edges together using your fingers or a fork. If it's not sticking you can dip your finger in water and run along the edge before pressing the disks together.
Brush a layer of maple egg wash on top of the pastries
Air fry for 6-7 minutes at 350. Check on them. Don't let them burn. Then turn over and air fry for another 3-4 minutes to make sure the bottom dough is cooked through. Let cool several minutes and enjoy!
