Hearty Tomato Soup & How To Style



So this is my version of tomato bisque inspired soup. It was a long time ago that I had it for the first time. And when those flavors touched my tongue, I nearly died of ecstasy. Funny how some things make a lasting impression that you can recall so vividly as if it happened yesterday. Anyway, it was served to me at a wedding and it made such an impact that it is one memory I have never forgotten. I decided to make my own version of it today.

This recipe is simple, but satisfying. It’s thick, slightly creamy, tangy, and salty. And best of all, it’s fast and easy and can be made in under 10 minutes. It‘s also filling because of the cream and fat content so it can be eaten as a main dish or paired with a nice grilled cheese or other sandwich, wrap, crackers or toast. So, lets get to it. Prep Time: 5 minutes

Cook Time: 5 minutes approx

Yields: 1 serving or 2 small servings


INGREDIENTS:

  • 15 oz can of organic tomato sauce (if you're is not smooth you can blend or puree it)

  • 1/4 cup full fat coconut milk or cream . Use more for more creamyness and less for less creamyness

  • Pinch of salt

  • Sprinkle of garlic powder

  • Sprinkle of onion powder

  • Olive oil for drizzling

  • Sprinkle of oregano

  • Sprinkle of fresh pepper

  • Parsley for garnish. You can also use thyme


INSTRUCTIONS:


  1. In a small pot over medium heat combine the tomato sauce and coconut milk. will bubble. If so, lower the heat.

  2. Add the pinch of salt, onion and garlic powders. Give it a taste and adjust to your liking.

  3. Thats it! Sprinkle on the oregano, pepper, and drizzle with olive oil before serving. Garnish with parsley or herb of choice.

SERVING SUGGESTIONS:

Serve as a main dish or paired with a nice grilled cheese or other sandwich, wrap, crackers or toast.
