Vegan Split Pea & Ham Instant Pot Recipe - 25 minutes

Looking for a hearty soup to hunker down with this winter? This is it. It's sooo easy and so easy to season and make taste good. Practically a no fail recipe (unless you burn it). If you like easy, simple, and delicious, this is for you.


In 25 minutes and for $6 you can feed the entire family with this hearty, nutritious and warming soup. And if you're single and live alone, this will last you 2-3 days. It’s packed with protein and fiber and carbs too to fuel you with the energy and nutrition you need any day. So, take a seat at the table and strap yourself in for winter with this plant powered soup and enjoy a hearty bowl of warming compassion 🌱 🥣. Recipe and process video below.

Oh, and if you don't have an Instant Pot, no worries you can still make this recipe stove top but it will require longer cooking times and potentially different hydration requirements. Adjust to your preference.

Yields: 4 servings

**You will need an Instant Pot. This recipe can be made stove top but will require longer cooking times and potentially different hydration requirements. Adjust to your preference.


**All proportions are approximated. Adjust to your preference and taste


INGREDIENTS:

  • 2 cups dried green peas

  • 1 cup chopped onion

  • 1-2 cloves minced garlic

  • 2 cups veggie broth (highly recommend the ones from the Asian market. They are the best in my opinion and you can find some that do not contain msg)

  • 2-3 cups water (I used a total of about 3 1/2 - 4 cups for this recipe as the peas have a tendency to soak up liquids and become thick)

  • 1/4 - 3/8 tsp or more of salt -- adjust to taste

  • 1/4 tsp or more garlic powder to taste

  • 1/4 tsp or more onion powder to taste

  • 2-3 bay leaves

  • Pepper to taste before serving

OPTIONAL: micro greens for garnish at serving time



INSTRUCTIONS:

  1. Dump everything into the Instant Pot and pressure cook on normal or high for 20 minutes.

  2. Once done, release all the steam before opening lid.

  3. Add water if too thick in 1/4 cup increments. Re-warm pot as necessary. I like to do this on "Sauté" mode.

  4. If diluting with water, add more salt and seasoning to taste.

  5. Reference process video above. It will show you the sautéing method, which isn't necessary for Instant Pot cooking. I just liking cooking that way because I'm used to it. :)

Recommendations: Garnish with fresh greens, whole peas, olive oil and pepper for added flavor and visual texture. Serve with toast, croutons or crackers. Heck add a few pieces of caramelized onions for a pop of flavor and even more texture if you want to get fancy. The world is your oyster. Experiment. Have fun! Food is art. Paint your canvas!

This looks so good and the sprouts on top are so pretty. Definitely going to make this one, I love split pea soup and this looks so easy!
