Want a holiday salad that's easy and festive, healthy and nutritious too ? Most importantly you can whip this up in 10 minutes. This salad is not only alkalizing, it helps to fight cancer, arthritis, Alzheimers, lowers blood pressure, and keeps your heart healthy. Those are just a few benefits that antioxidant powerhouse pomegranates offer. And you know what they say about apples? "An apple a day keeps the docs away". Not to mention the heart and brain boosting effects that walnuts offer.
This salad contains spinach, pomegranates, apples (pears can be used in place of), walnuts and almonds (optional) too. It also has vegan chicken. If you're not a fan of mock meats you can sub with fried tofu, tempeh, or omit it altogether. It's naturally sweet from the apples and pomegranates but it's tart too from the dressing. Oh and let me say again, this salad can be ready in 10 minutes.

**All proportions are approximated. Adjust to your preference and taste
INGREDIENTS:
1/2 a bag or 5 oz of spinach approx
3 Vegan chicken strips -- chopped and seared (I used Lightlife from Trader Joe's)
Walnuts - as much as you'd like
Pomegranates 1/8 cup or as much as you'd like
1/2 an apple -- sliced
Balsamic glaze (from Trader Joe's)
1 - 2 tbsp apple cider vinegar
Salt to taste
Pepper to taste
Cooking oil to sear the chicken

OPTIONAL: sliced allmonds
OPTIONAL: soy sauce, tamari, or coconut aminos for added flavor
OPTIONAL: maple syrup sweetened to your liking if preferred but the vinaigrette glaze is sweet already
OPTIONAL: purple onions. This would disrupt the red and green color combo but I think onions would taste great in this recipe
OPTIONAL: hemp seeds for extra crunch and nutrition
INSTRUCTIONS:
On a hot, oiled skillet, sear the chopped chicken. This should take about 5 minutes.
Once done, assemble the salad by layering in the spinach, walnuts, almonds, and chicken. Then drizzle with oil, apple cider vinegar, balsami glaze, soy sauce or coconut aminos, and sprinkle salt and pepper to taste. Or use your favorite vinaigrette dressing. Give it a taste, adjust sauces and add maple syrup to sweeten if preferred. Salt and pepper to salt.
Mix the salad. Then layer in the apples. Sprinkle some pepper a top.
