Vegan Scallops 🌱


These scallops are seriously so simple and delicious and requires about 15 minutes your time. Made out of king oyster mushrooms, seasoned with salt and garlic, they are meaty... dare I say even as meaty as scallops are if not more, with a pretty good bite to them. They make a pretty convincing scallop dish. If you're a mushroom lover you will for sure love this. And if you're a garlic lover the aroma will knock your socks off. Total time: 15 minutes

Yields: 1 serving

*You will need skillet. I used a small cast iron

**All proportions are approximated. Adjust to your preference and taste

INGREDIENTS:

  • 1 king oyster mushrooms cut into 1/2" slices (or use as many as you'd like. I always do single servings because I'm only feeding myself)

  • 4-5 cloves of garlic - minced.

  • Butter or cooking oil. I used oil

  • Salt to taste

  • Pepper to taste

  • Optional: fresh parsley or thyme as garnish , olive oil for drizzling


INSTRUCTIONS:

  1. Wash and dry your mushrooms and cut into 1/2" slices. Then cut tic tac toe designs onto side about 1/16" deep, more more than 3/16" or you run the risk of your scallops breaking apart.

  2. In a large skillet or pot over low-medium heat heat the mushrooms a few minutes to release some of the water on both sides. Add in some cooking oil or butter. You can use a blend of both if you'd like. Cook until golden on each side. Sprinkle a light layer of salt to taste on each side.

  3. Before the scallops are done cooking, add in the garlic for the last 2-3 minutes. Don't cook until golden or brown. Lightly cooked is good until you smell the aroma.

  4. Serve with some drizzled olive oil, parsely as garnish, and pepper
