Vegan graham crackers are a difficult thing for me to find. I've been eating s'mores every night on crisp bread and I was tired of it. I wanted proper s'mores on real graham crackers. So, I made some and omg, these are hella gooood. The graham crackers are tender with a soft bite. And the flavor is spot on. So good. I mean soooo goooood. I'm now a happy camper who can enjoy real s'mores. My food options just grew a little. Life is good. And summer isn't quite over so it's perfectly appropriate to enjoy this campfire dessert.

I halved the recipe since I'm always the only one eating my recipes, and added a bit more water, changed the salt portions, and changed the process and cooking times a little. Ingredients: Graham Crackers , marshmallows, chocolate .
If you don’t have chocolate rectangles you can melt some chocolate chip and pour them into a mold and refrigerate or freeze it. Then cut it up into smaller squares or rectangles before use
Graham crackers ready to go into the oven. 2" wide by 3" long.
Prep Time: 15 minutes
Refrigeration time: 20-30 minutes
Bake time: 8-12 minutes
Cooling Time: 20 minutes
Assemblage time: 2-3 minutes
Total Time: 1 hour 25 minutes approx
Yields: 8-10 crackers (3"L x 2"W)
INGREDIENTS: (for graham crackers)
1 1/8 cup all purpose flour
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp fine sea salt
1/2 tsp cinnamon powder
1/4 cup organic brown sugar
1/4 cup vegan butter (room temperature)
1 1/2 tbsp water + 1 tsp water
1 1/2 tbsp maple syrup
OTHER INGREDIENTS:
Vegan marshmallows
Vegan chocolate bar (ideally) - enough to make 5 s'more sandwiches
Refined coconut oil -- optional
INSTRUCTIONS:
Make the graham cracker dough: combine all the dry ingredients first, then add the butter, maple syrup and water. Combine with fork or use a food processor. Roll into ball and place in bowl with lid or cover with saran wrap and refrigerate about 20-30 minutes.
Make the chocolate bars: while waiting for the graham cracker dough to chill. You can skip this part if you already have chocolate bars. If not, melt some chocolate chip by microwaving for 30 seconds, stirring, and microwaving another 30 seconds. It's ok if some bits are not melted. Go ahead and stir it and the rest will melt. This will help temper the chocolate. Optional: add a little bit of refined coconut oil (up to 1 tsp) and place in a mold. Pop in the refrigerator or freezer for 20-30 minutes or until solid. Place another portion or chocolate chips into a small bowl (to be melted later for drizzling). Reference image above.
Prepping the gram crackers for baking: Pre-heat oven to 350. Remove dough from refrigerator and roll out to 3/16" thickness (a hair less than 1/4"). Cut it up into whatever size or or shape you want. I recommend rectangles or squares. Use fork and poke lightly to make indentations. See image above. Place on cookie sheet lined with parchment paper and bake for 8-12 minutes at 350 degrees. Once done let cool for about 20 minutes before assemblage.
Prep the marshmallows: put 2 marshmallows onto a chopstick or skewer (poke the stick right through the center of the marshmallow) and roast over open flame for some nice char marks. Remove from skewer or chopstick.
Melt the chocolate in the small bowl (for drizzling): microwave for 30 seconds, stir, and microwave another 30 seconds. Stir and combine with unmelted bits. Set aside. Optional: add a small amount of refined coconut oil.
Assemblage: Drizzle a small amount of chocolate onto the inside of a graham cracker. This will act as glue. Then place two charred marshmallows on top. Drizzle some of the hot melted chocolate on top of the marshmallows. Then place a chunk of chocolate square on top of that. Drizzle a tiny amount of chocolate onto the inside of the other graham cracker and place that side down onto the chocolate square to complete the sandwich.
