With Valentine's right around the corner it's the perfect time to make these. Just because most of us will be celebrating quarantine style, it doesn't mean we have to compromise on festivity. We all know Valentine's Day revolves around love, and hearts, and chocolate and flowers. There's no better way to move your significant other's heart than to serve them a tray of uber cute red-heart-centered hand pies. I guarantee they'll love you more for it since it was made with loving care. Or if you're like me, a lone-wolf and the sole most significant person in your own life, and cursed to be alone forever on this holiday, then you definitely need to show yourself some love, make a tray for yourself and go to town!
The best thing about this recipe, well it's cute for one, am I right? But it's also suuuupppper easy. You could definitely make it less easy by making your own preserve filling. But, this is an easy recipe. You can make it even easier by buying pre-made pie crust. I did make my own before-hand and all I needed to do was defrost it. Scroll down and see.
Why not make a tray and pair it with a cute little message or note? They will be so tickled inside they might die of warm fuzzies.
Sorry I forgot to take process photos of me rolling out the dough. The edge indents are made using a fork.
Use a round cookie cutter or a mug, bowl, or jar if you don't have one. Either use a cookie cutter for the center or if you're good with a knife you can try cutting hearts using that. But a cookie cutter will be much easier and time efficient. I got mine at Daiso for $1.50.
Prep Time: 15 minutes
Bake Time: 17-20 minutes approx or until lightly golden
Total Time: 40 minutes approx
Yields: 3-4 estimated servings approx
*You will need a round cookie cutter, a smaller heart-shaped one, a large baking tray or two medium ones, a fork, and parchment paper , a pastry brush
INGREDIENTS for Pie Crust or buy the pre-made stuff:
1 1/2 cup all purpose flour (add 1/2 tsp or a little more if dough is too wet)
1/2 cup cold plant butter
1/2 tsp sugar
1/2 tsp salt
1/3 cup + 1 tbsp cold water
Instructions for Pie Crust:
Mix flour, sugar, and salt together then add cold butter and mash it into the dough until well incorporated. Add water. Mix it all together and form into a ball. Let it rest covered for about 15 minutes in the refrigerator. Leaving it out at room temperature is ok too if it's not too hot. Then with a floured rolling pin roll out the pie dough to 1/8" thickness.
INGREDIENTS for Filling:
Raspberry jam or preserve. You can use strawberry as well, as long as it's red.
Coarse sugar - I used turbinado
NGREDIENTS for Egg Wash: 1:1:2 ratio
1 tsp sugar
1tsp acquafava
2 tsp water
Instructions for Pie Crust:
Mix it all together, then microwave in 10 second increments, stirring in-between. You want the sugar to melt and the liquid to get a little hot and thick. Set aside to cool and thicken a bit. It should feel similar to the consistency of an egg white, a little slimy but thinner.
INSTRUCTIONS for Combining Soup and Pie Crust:
Pre-pare the pie crust as above (or use frozen pie crust that has been thawed to room temperature)
Pre-heat the oven to 350-365 degrees and go roll out the pie dough.
Making the bottom pie layer: After rolling out the dough to 1/8" thickness, use round cookie cutters and press into the dough, wiggle a little to help release. Lay the round dough disks on parchment lined baking trays.
Now do the same but this time make the top layer with the heart cut outs. Each pie will have 2 layers: a top with the cut out, and the bottom solid layer. Make sure they are properly paired up. If you have excess dough continue rolling them out to make more cookies. You can make smaller cookies as well. Reference my images above. Or your can freeze the excess and save for future use.
Filling the pies: spoon in some of the raspberry jam onto the center of the bottom layer. Try out different amounts. It shouldn't be too little or too much to where it's spilling out. Place the top layer on top and press the edges together with a fork.
Once all assembled, brush the dough with egg wash and sprinkle with coarse sugar. About mid way or 10 minutes before done, brush again with egg wash to encourage browning.
Bake for 17-25 minutes or until golden. Let cool 5-10 minutes before serving.
