Vegan Peppermint Mocha

Want a festive, warming, good drink, that's also full of kindness and compassion and a little healthy? Why not whip a cup of this Vegan Peppermint Mocha for yourself or your loved ones. It'll take them back to childhood, and bring back a sense of warm nostalgia. Best of all, you can make a cup in about 7 minutes.


You can make this as thin or as thick as you want. You can drink it like water or like a thick syrup. You can make it as sweet or as bland as you want. It's completely up to you. Personally I like mine somewhere in between. And I'll give you my recommended ingredient proportions down below.


It has maple syrup which has antioxidants and and helps fight inflammation. It also has molasses, which has iron, selenium (cancer fighting), and copper which helps to to maintain bone health and has an anti-greying effect on hair. Sounds good right? You certainly don't need to use multiple sweeteners. You could use just maple syrup or even sugar. But I like to include a variety to help me get squeeze different health benefits into a comforting, yet indulgent, and potentially decadadent drink.

Total time: 5-7 minutes

Yields: 1

**You will need a 8-10 oz standard sized mug and an ibrik or small boiling pot

**All proportions are approximated. Adjust to your preference and taste


INGREDIENTS:

  • Plant milk of choice (I used coconut cream b/c that's what I had but I've made this using all kinds of plant milks and they all taste good)

  • 1-2 tsp of cocoa powder approx (add more for stronger taste and more thickness)

  • 1 tbsp chocolate chips

  • 1/2 tsp maple syrup

  • 1/2 tsp molasses

  • 1/2 date syrup

  • Crushed candy cane for topping

  • Vegan marshmallows for topping

  • OPTIONAL: cinnamon powder for sprinkling

  • OPTIONAL: dash of vanilla if it isn't included in your plant milk

  • OPTIONAL: cinnamon stick or candy cane as garnish and stir stick

INSTRUCTIONS:

  1. Using your mug, fill it with plant milk. Then pour the milk into an ibrik or pot and boil over medium heat .

  2. Once boiling, turn heat down to low. Add the cocoa powder, and sweeteners, and chocolate chip. Give it a taste and adjust all to taste. Add more cocoa powder and chocolate chips for thicker consistency. Or add more milk or water to dilute. Leave about an ounce on the side for drizzling if you want to be fancy. Or skip if you don't care.

  3. Pour back into the mug and top with marshmallows and crushed candy cane. Drizzle some hot cocoa on top for extra visual effect. Sprinkle with cinnamon if desired.


Recommendations: You can garnish with a stick of cinnamon or candy cane by placing them into the mug and using them as stir sticks.
