Vegan Peanut Butter Milk Shake

Strangely, lately I've been craving peanut butter so I've decided to partake in a collaboration with some online friends and throw together this ultra quick 5 minute cheat recipe here.


It's really not a problem if you can't make it to the ice-cream shops this pandemic. With a snack like this, you won't feel the need to.


It's ice-cream so of course it's good. But with swirls of peanut butter, and chunky cookies, a pinch of salt so you can further save time and avoid making salted caramel because this is a quick and easy recipe after all. It's creamy, sweet, a tiny bit of salty, a little crunchy, and delicious. It hits the spot. And I can have two servings of these.


No blender? No problem. There will be some very light churning involved.

Total Time: 5 mins

Yields: 1 shake


INGREDIENTS:

  • Non-dairy Almond Vanilla Ice-Cream (1 container will only yield 2-2.5 shakes approx)

  • 1-2 crushed Vegan Speculos Cookies from Trader Joe’s and 1 for garnish

  • 1-2 tbsp Peanut Butter

  • 1-3 tbsp Plant Milk of choice

  • Maple Syrup — optional

  • Coconut Whipped Cream — optional

  • Pinch of Salt — optional

INSTRUCTIONS FOR BLENDER METHOD:

  1. Pick the serving glass you plan to have the shake in, fill it 7/8 or all the way . Add the p plant milk

  2. Transfer it into a blender and blend. Adding more milk or ice cream until you're happy with the consistency.

  3. Transfer back to cup and spoon in the peanut butter. I like doing it this way so I can see and taste chunky swirls. If you don't care for that just throw it in the blender with the ice-cream.

  4. Crush 1-2 cookies (I used a pester and mortar) and spoon it in for chunky texture effect.

  5. You can stop here or continue to top with a dollop of whipped cream, drizzle on some peanut butter or maple syrup on top, with a pinch of salt and some more crushed cookies to be fancy and top it off visually.


NO BLENDER METHOD: (I like this method better)

If no blender, put the softened ice-cream (soft enough to scoop) into a glass, add 1- 2 tbsp approx milk...depending how thick you want it. Add 1tbsp+ approx peanut butter and swirl it around with the crushed cookies. Top with whipped cream, some more crushed cookies and a pinch of salt. Tell me you're not addicted.
