Vegan No Bake Mug Carrot Cake

Want to eat cake but don’t feel like baking, committing to an entire cake, having so much left over? This recipe is for you. It’s an individual serving for those days you just need an ultra quick fix.

Always a good day when you can have cake and not have to bake.



 

Prep Time: 5 minutes

Microwave time: 2 minutes approx

Servings: 1


**You will need a standard size mug for this (at least 8 oz)


INGREDIENTS: (for cake only)

  • 6 tbsp flour

  • 2 - 2 1/2 tbsp brown or white sugar

  • 4 tbsp grated carrots

  • 1 vegan egg

  • 2 tbsp plant butter (1.5 is ok too)

  • 1 1/4 tbsp plant milk

  • 1/2 tsp baking powder

  • 1 tbsp apple sauce

  • Sprinkle of cinnamon

OPTIONAL INGREDIENST:

  • 1 tbsp walnuts

  • 1 tbsp raisin


ICING: Sorry, I don't have a recipe here because icing is not my forte. You can mix powdered sugar together with vanilla, a very small amount of plant milk and lemon juice or cream cheese. Or apply Icing of your choice.

INSTRUCTIONS:

  1. In a small mixing bowl, mix all ingredients together.

  2. Oil or butter the inside of a mug and pour the batter in.

  3. Microwave for about 2 minutes

  4. Let it cool a a few minutes and eat the cake in the mug or use a butter knife to scrape the sides and wiggle the cake out onto a plate. When cool enough, top with icing and serve!
