Vegan Mini Meatloaf

made with Beyond Meat patties



Bite Size Vegan Mini Mealoaf. Looks and taste like meat but made of plants. .🌱

I made this using the below ingredients, all ingredients I already had on hand. I didn’t have a meat loaf pan so I just lined my cupcake pan with parchment paper. Using a loaf pan would be best however you can get creative and use whatever pan you’d like. :)

Recipe goes as follow. I don’t measure anything. Everything is measured with the eye and seasoned to taste but here are some good measurements to start with as recommended proportions. But remember, adjust all to taste. After all, you are cooking for taste buds, not mine.  👀👅 😋

-2 beyond meat patties (get the new “beefier / meatier version for more neutral flavor)

-onion powder 1 tsp

-garlic powder 1tsp

-cumin 1tsp 

-paprika 1tsp

-sprinkle of nutritional yeast (optional)

 -salt 1tsp (more or less to taste)

-pepper 1tsp

-spinach 1/4 cup or less

-onions 1/4cup or less

-portabella 1/4 cup or less

-celery 1/4 cup or less

-bread crumbs about 1/2 cup (i used Panko)

-organic ketchup 1/2 cup approx 

 -2 flax eggs

Mash all the ingredients together including about 1/4 cup of ketchup or less , put into pan and mold to desired shape (line pan with parchment for easy clean up if you’d like). Use a spatula or spoon and smear ketchup on the top of the meatloaf until well covered. Bake in 400 degree oven for 30-45 mins depending on your oven. Watch it. Don’t let it burn. Let cool before serving. Enjoy! 😋🌱
