Vegan Glazed Donuts

I was craving donuts. But with pandemic policies and living not so close to a donut shop and out of range for delivery,, obtaining vegan donuts isn't always so easy. So, I decided to take matters into my own hands and make them myself.


This recipe was adapted from YouTube recipe creators Kale Sandwich Show (video linked here https://youtu.be/c2gHlPWS_nQ) . Since I only prepare food for myself, I halved the recipe, changed the proportions slightly to properly hydrate my flour, and added a little more sugar for sweetness. I also created my own glaze.


This recipe is very versatile and can be used as a base for different flavor varieties. While I wouldn't say these are an exact copy of the light, airy, and soft Krispy Kreme donuts, but they are light, yeasty, and fried and a great substitute with a very nice texture indeed. Here I've created a sugar glaze and with some freeze dried raspberry sprinkles. But I also tried these with vegan condensed milk (similar to what you find at Asian tea houses) , and peanut butter and jelly. I have to say the peanut butter jelly combo was my favorite. But, with using just this base, the flavors and toppings are endless.

THE DOUGH NUT PROCESS -- see below for written glaze process

After mixing dough with machine, it will look like this.

After doubling in size

Rolled out to 3/8" thickness and cut into circular donut shapes . I used a mug and a shot glass for the center

Extra dough can be made into round balls.

Once oil is hot, over medium heat, fry until golden about 30-45 seconds per side



Flip over and repeat

Dry and glaze on cooling rack with tray under neath.

Inside texture looks like this. Because of the size of the balls, I undercooked these slightly. No biggie. Ate it anyway.


 

Total Time: 3-4 hours

Yields: 6 donuts approx (or 4 big ones and a bunch of small ones)


INGREDIENTS - DOUGH:

  • 1 1/2 cups all purpose flour (I used King Arthur)

  • 1 flax egg

  • 3/4 tsp yeast + 1 tsp warm water + pinch of sugar (I used instant yeast)

  • 1/2 cup plant milk of choice

  • 1/4 cup sugar

  • 1/4 tsp salt

  • 2 1/2 tbsp vegetable shortening at room temperature

  • 1/4 tsp vanilla


GLAZE:

  • 1/2 cup powdered sugar

  • 3-4 tsp aquafaba (chick pea juice)

  • 1/8 tsp vanilla

  • OPTIONAL: a drop of food coloring (I used pink)

  • OPTIONAL: small amount of jam for flavor


Glaze Instructions: Mix it all together in a bowl, voila. Done. Add a few drops more liquid to make it less thick or more sugar to make it more thick. Do this as you're waiting for the donuts to cool.


TOPPING:

  • Use any of choice. I crushed up some freeze-dried raspberries and would have added fresh raspberries too if I had them


INSTRUCTIONS:

  1. In two small seperate bowls, prepare yeast and flax egg and set aside for 10 minutes

  2. Then combine all ingredients and mix on low speed (I used 2) for about 8 total minutes. Add the milk in slowly and make sure to use proper amounts for your flour. If too dry, add more milk in small amounts at a time. If too wet, add more flour until thoroughly combined and no dry bits are left.

  3. Cover and let the flour rest until doubled in size. Due to cold winter weather mine took about 3 1/2 hours.

  4. Once flour has doubled, lightly flour a work surface and rolling pin. Roll the dough out to about 3/8" thickness and cut out donut shapes -- reference process images above.

  5. Once all the donuts have been cut out, cover with a cloth or Saran Wrap and let rest again until doubled in size. Mine took about 30-45 minutes.

  6. Fill a pot about 1- 1 1/2" deep with oil. Once oil is hot, fry oh medium heat until golden. About 30-45 seconds per side.

  7. Let cool on cooling rack about 10-15 minutes and go make the glaze.

  8. In a bowl that's larger than the donuts, prepare the glaze. Then dip the donuts into the glaze and give it a spin. Transfer to cooling rack with tray underneath to let dry - about 15 minutes. You can add any sprinkles or toppings of your choice at this time.

SERVING SUGGESTIONS: Try these with a regular sugar glaze and different sprinkles, dipped into condensed milk , or make a peanut butter jelly sandwich. Add some fresh fruit with mint even. The options are endless!
