Vegan Chicken & Waffles


 

I’ve been wanting to make Vegan Fried Chicken for a looong time. I had a hard time finding wheat gluten flour. Well, I went to 3 different super markets and finally found it. So here goes. Scroll all the way down for the recipe.






 

Total time prep & cook about 1+ hours

Makes 3 mini waffles or 1 giant one 

Makes 8-10 chicken strips 



Fried Chicken Ingredient List: 

*For this recipe I pretty much used all the seasonings in my pantry that looked interesting to me. 



Wheat Meat: 

1 cup vital wheat gluten

3/4 cup water

1 tbsp garlic powder 

1 tbsp onion powder

1/2 tsp salt 

1/2 tsp pepper (I used black and white)

1/2 tsp coriander

1/2 tsp mustard powder

1/4 tsp cajun seasoning

1/4 tsp chilli powder 

1/4 - 1/2 tsp paprika

**Add in any other seasoning of your choice if you'd like. 


 

Egg wash: 

2 flax eggs

1/4 - 1/2 cup coconut milk 

1-2 tbsp mustard

1/4 tsp baking powder



Dry Flour: 

1 - 1 1/2 cup flour of choice ( I mixed all purpose and almond flour) 

1/4 tsp salt

1/4 tsp pepper 

1/4 tsp white pepper 

1/4 tsp onion powder

1/4 tsp garlic powder

1/4 tsp coriander 

**Add in any other seasoning of your choice if you'd like.


  

1. Fill a pot with water about half way and boil. Throw in the wheat meat and cover for 30 minutes over medium heat.  When done, take it out and squeeze out excess liquids from the wheat meat. 

2. Prepare the dry mix.  Combine all ingredients into a deep bowl and mix well

3. Prepare the egg wash right before frying the wheat meat. Combine flax eggs, mustard, coconut milk and baking powder. Mix all ingredients well. 

4. After squeezing out excess water from wheat meat, cut into chicken strips using knife or kitchen sissors.  Warm a pan or pot with oil and fry over medium low heat, making sure to turn the chicken so that all the sides are golden brown.  Let dry on drying rack or paper towels. 



Waffles: 

 Use any packaged waffle mix of your choice but this is how I made mine.

1/4 cup all purpose flour

2 tbsp vegan protein pancake flour mix from Sprouts 

2 tbsp rice flour

1 tbsp tapioca flour 

1/4 tsp or a little less of baking powder 

1- 1 1/2 tbsp sugar (I used powdered) 

1 tbsp oil (I used coconut oil) 

Pinch of salt 

1/4 cup coconut milk +/-

*maple syrup



1. Combine all the dry ingredients.  Then add in the oil and pour in the coconut milk a little at a time while stirring.  Make sure the consistency isn't too thin of liquid.  It should be thicker than pancake mix, a little closer to cottage cheese consistency, but not quite as thick. 

2. Heat your waffle maker and spray with oil as necessary. Pour in batter and cook. 

*Double or triple the the recipe of you'd like but keep the baking soda to about 1 tsp. 

**All ingredients and measurements are approximate. Adjust all to your personal taste.  Just make sure the waffle batter isn't too watery or runny.  If that happens, just add more flour to thicken. 

Serving Suggestions: 

Since this is pretty much Vegan junk food and isn't nutritionally dense I like to slice up some strawberries or other fruit.  It's nice to get a bite of something fresh and refreshing when eating fried brown stuff.  Garnish with mint if you'd like and drizzle with maple syrup.
