Vegan Chicken Tacos 🌮


These yummy tacos are full of vegan compassion, gluten free, and ready in 15 minutes. Sound too good to be true? It's not. Scroll down for this quick meal fix recipe. Perfect for any week night and weekend too.







 

Total time: 15 minutes

Yields: 1-3 servings


*You will need medium or large sized skillet for this . I like cast iron because it crisps better.

**All proportions are approximated. Apply to your preference and taste

INGREDIENTS:

  • Tortillas (I used Mikey's pictured above)

  • Chopped Vegan Chicken (highly recommend Sweet Earth's Mindful Chik'N pictured above. It has great texture and taste best in my opinion for this recipe)

  • Taco Seasoning Packet (sprinkle to taste)

  • Salt to taste

  • 1 can of black beans, drained, rinsed and heated

  • Chopped white onion for topping

  • Vegan sour cream (I use Kitehill brand pictured above)

  • Chopped cilantro for topping

  • Your choice of salsa or pice de Gallo

  • Optional: Lemon or lime wedges on the side at serving time

  • Optional: Vegan cheddar cheese

  • Optional: hot sauce (Chalula or Tapatio is good)

  • Cooking oil

INSTRUCTIONS:

  1. Heat the tortillas in a pan with a small amount of oil on each side and set aside.

  2. Heat the drained and rinsed black beans and set aside

  3. In a heated skillet over medium high heat, drizzle in enough cooking oil to coat the bottom of the pan. Once heated, throw in the chopped chicken and cook until golden brown. This will take. no longer than 3-5 minutes. Sprinkle in the taco seasoning and salt to taste.

  4. Assemble the taco: spoon in some chicken, onion, beans, cilantro, sour cream, cheese and salsa. Sprinkle some salt to taste as needed and add a few drops of hot sauce as you'd like. A few drops of lemon to add even more flavor.
