Vegan Chicken Gyros 🥙


This is a quick meal recipe with very minimal cooking (heating) and preparation. If you're fast you can throw this together in under 15 minutes. If you're slow, 20 minutes. Not bad. Great if you're pressed for time, like I am, and you just want a quick meal solution because let's face it, we need to eat.


With the except of the vegan sour cream (from Sprouts), all ingredients were bought at Trader Joe's. You don't have to buy the falafels, but I highly recommend you do. They are delicious and make a wonderful side serving. Why bother making them yourself. Also, for this recipe, you don't have to make the tzatziki sauce but I also highly recommend you do as it really adds to the overall flavor and eating experience. Plus you can dip your falafels in it. See below for how I put this together.




Ingredients for Gyro. The tzatziki sauce is shown here already prepared


I used 4 chicken strips and sliced them in half to make them thinner. Then I used 4 thin strips per half pita.

 

Total Time: 15 mins approx Servings: 1 INGREDIENTS: (for gyro)

  • Pita bread

  • 1 small cucumber sliced

  • 1 small tomato

  • Onion slices

  • Greens of choice

  • Vegan chicken (I used 4 slices and sliced them in half to thin them out. Then I used 4 thin slices per half pita)

  • Tahini Sauce

  • Garlic Spread INGREDIENTS: (for tzatziki )

  • Vegan sour cream (about 1 cup but you can use the entire container if you want and refriderate the left overs)

  • Juice from a small lemon or apple cider vinegar (try 1/2 tsp at a time until desired taste is achieved)

  • Chopped dill

  • Chopped cucumber (with the juice squeezed out)

  • Salt to taste

  • Pepper if you'd like

  • OPTIONAL: Fresh garlic if you'd like or garlic powder to taste

*Adjust all portions to your personal taste.


INSTRUCTIONS:

  1. Cook the vegan chicken and falafels: In a heated oiled pan or skillet over medium heat, cook the chicken and falafels until desired golden-ness and crispness. Set aside.

  2. Make the Tzatziki sauce: Combine the sour cream, chopped dill and cucumber, lemon juice or apple cider vinegar, salt and garlic. Adjust to taste. Set aside for drizzling and dipping.

  3. Assemble the gyro: Cut the pita in half. I used kitchen shears to make this easy. Open up the pita and spread a layer of garlic spread and tahini. Layer in the lettuce, tomato, chicken, cucumber, and onions. Drizzle in the tzatziki and sprinkle salt as needed for taste.

SUGGESTIONS: You can replace the chicken with falafels for a little variety. I've also made this using vegan beef such as Beyond Meat and Impossible Meat, molded into the shape of kebabs and seasoned it with salt, pepper, paprika, cumin to taste. I've used lavash bread and crumbled in some vegan feta as well. It's really delicious that way too. Try it out and see! :)
