3 Way Toast

Why would you eat toast one way when you can eat it 3 ways? Some people are into menage trois... Well, this is the only type of threesomes I'm into. The ones that go into my belly!


On top we have vegan ham and cheese toast with olives. I would have probably added some tomatoes on top but I didn't have any.


In the middle, your trendy avocado toast.


And last but not least, vegan chickpea tuna on toast. So vegan, I know. This will take up the bulk of your time. But it's yummy, nutritious, and worth it. You can do this.

I apologize I neglected to see that the gluten free crisp bread has honey in it and therefore is not vegan. However, the non-gluten free variety is.

I forgot to include this in the ingredients shot so it get's a giant stand alone shot lol. Forgive my offense.

 

Total time: 15-20 minutes approx

Servings: 1 serving each of the ham and cheese and avocado toast. 3-4 servings of the chickpea toast


INGREDIENTS: for Ham & Cheese Toast

  • Trader Joe's Gluten Free Crisp Bread or toast of choice

  • 2 Tofurkey slices

  • Miyoko's cream cheese

  • Trader Joe's Olive Tapenade from the refridgerated section

  • Tomatoes if you have it

  • Trader Joe's Everything But the Bagel seasoning

  • Salt

  • Pepper


INSTRUCTIONS:

Spread the cream cheese onto toast. Then add the tofurkey slices and top with olive tapenade and tomatoes if you have it. Sprinkle with salt, pepper and everything but the bagel seasoning.



INGREDIENTS: for Avocado Toast

  • Trader Joe's Gluten Free Crisp Bread or toast of choice

  • 1 small avocado, sliced

  • Trader Joe's Everything But the Bagel seasoning

  • Salt

  • Pepper


INSTRUCTIONS:

Place the sliced avocados on top of the toast. Sprinkle salt, pepper and bagel seasoning.


INGREDIENTS: for Chickpea Tuna Toast

  • Trader Joe's Gluten Free Crisp Bread or toast of choice

  • 1 can chickpea, drained and mashed

  • Vegenaise, enough to cover the the chickpeas

  • 1/4 - 1/2 tsp yellow mustard

  • Garlic powder

  • Onion Powder

  • Trader Joe's Everything But the Bagel seasoning

  • Salt

  • Pepper

  • OPTIONAL: Trader Joe's Vegan Chickenless Seasoning


INSTRUCTIONS:

Drain the chickpeas and mash them. I used a potato masher first then went in and refined the mash with a fork. Add a layer of all the seasonings (except the bagel seasoning) and give it a mix. Add enough Vegenaise to cover the chickpeas. Add the mustard. Incorporate well. Taste it and adjust all ingredients to taste. Spread on top of toast. Sprinkle with the bagel seasoning. And drizzle some olive oil on top before serving if you'd like.
